Ingredients
For the Pecan Base:
2 ½ cups pecans (whole or large pieces)
For the Caramel:
½ cup salted butter
1 cup brown sugar (packed)
½ cup light corn syrup
7 ounces sweetened condensed milk (½ of a 14-ounce can)
½ teaspoon vanilla extract
For the Chocolate Topping:
1 (12-ounce) package milk chocolate chips
½ teaspoon shortening (or butter-flavored shortening)
Step-by-Step Instructions
Step 1: Toast the Pecans
Place the pecans in a large skillet over medium heat. Stir frequently to prevent burning. Toast for about 3–5 minutes, or until they become slightly darker and fragrant.
Toasting enhances the nutty flavor and adds depth to the finished candy. Remove from heat and allow them to cool completely before assembling the clusters.
Step 2: Prepare the Baking Sheets
Line two large baking sheets with parchment paper. Lightly spray the parchment with cooking spray to prevent sticking.
Arrange the pecans into small clusters of three, forming a triangle shape. Leave about 1 inch of space between each cluster to allow room for caramel and chocolate.
Step 3: Make the Caramel
In a medium saucepan over medium heat, combine:
Butter
Brown sugar
Light corn syrup
Sweetened condensed milk
Stir continuously as the mixture melts and begins to combine. Once it starts to bubble, continue stirring constantly to prevent scorching.
Allow the caramel to cook for about 8–10 minutes, or until it thickens and turns a rich golden-brown color. The texture should be thick but still pourable.
