When trimming is okay

You can safely trim and use the ginger if all of these are true:

  • The white fuzz is small and on the surface

  • The ginger is firm, not wrinkled or mushy

  • It smells fresh and spicy, not sour or fermented

  • The inside is yellow and solid, no dark spots

How to do it safely:

  • Cut off at least 1 inch (2–3 cm) around and below the moldy spot

  • Use a clean knife

  • Rinse and dry the remaining ginger

  • Use it soon (or freeze it)
