When trimming is okay
You can safely trim and use the ginger if all of these are true:
-
The white fuzz is small and on the surface
-
The ginger is firm, not wrinkled or mushy
-
It smells fresh and spicy, not sour or fermented
-
The inside is yellow and solid, no dark spots
How to do it safely:
-
Cut off at least 1 inch (2–3 cm) around and below the moldy spot
-
Use a clean knife
-
Rinse and dry the remaining ginger
-
Use it soon (or freeze it)
