Chocolate, coffee, and soy sauce: yes, but with nuances

Dark chocolate, without fillings or fragile inclusions, keeps for a very long time. Even after the date indicated, it remains edible, although its aromas may diminish slightly over time.
Coffee, whether whole bean or ground, can be consumed well past the recommended date if stored in an airtight container, away from light and air. Its taste will gradually change, but it will not become unfit for consumption.
As for soy sauce, its high salt content and acidity make it particularly stable. Even several years after opening, it remains safe to consume if it has been stored in the refrigerator and properly resealed.
Canned goods, legumes and specialty drinks

Dried legumes such as lentils, chickpeas, or beans don’t actually expire. Over time, they can become harder: soaking them for a long time before cooking will restore a satisfactory texture.
Canned tuna can be kept for several years thanks to the sterilization process, provided that the can is not bulging, rusty, or damaged.
