Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of a 9×9 inch baking dish to form the crust.
- Bake the crust for about 8–10 minutes, then remove and let it cool completely.
- In another bowl, whisk together the lemon pudding mix and cold milk until it begins to thicken.
- Add sweetened condensed milk, lemon juice, and lemon zest. Mix until smooth and creamy.
- Spread the lemon filling evenly over the cooled crust.
- Add the whipped topping over the lemon layer and smooth it with a spatula.
- Sprinkle extra lemon zest on top.
- Refrigerate for at least 3–4 hours until fully set.
- Slice into squares and serve chilled.
