1. Season and Sear the Pork Chops:
Season chops on both sides with salt, pepper, garlic powder, onion powder, and paprika.
Lightly dust with flour.
Heat oil or butter in a skillet over medium-high. Sear pork chops 2–3 minutes per side until golden brown. Remove and set aside.
2. Make the Gravy:
In the same pan, reduce heat to medium. Add a little more oil if needed.
Add sliced onions and cook until softened (about 5 minutes). Stir in garlic.
Sprinkle in flour and cook for 1 minute.
Slowly whisk in broth (or broth + milk). Add Worcestershire sauce if using. Simmer until thickened (3–5 minutes). Season to taste.
3. Add Potatoes & Simmer:
Nestle sliced potatoes into the gravy. Lay pork chops on top.
Cover and simmer on low heat for 30–35 minutes, or until potatoes are tender and pork is cooked through.
OR transfer to a 375°F oven and bake for about 35–40 minutes covered, until everything is tender.
4. Finish & Serve:
Garnish with parsley. Serve hot with a side of green beans, cornbread, or rice.
