Preparation:
- In a large bowl, cream together the softened butter and powdered sugar.
- Add the egg and vanilla extract and mix well.
- Add flour, cinnamon and ground almonds or hazelnuts. Knead the dough into a smooth mixture. If the dough is too sticky, add a little more flour.
- Wrap the dough in cling film and let it rest in the refrigerator for at least 1 hour.
- Preheat the oven to 180 degrees Celsius and line baking sheets with parchment paper.
- Roll out the dough on a lightly floured surface until it is about 3-4 mm thick.
- Cut out circles with a round cutter. Cut out a small hole in the middle of half of the circles to achieve the typical “Linzer eyes” shape.
- Place the cookies on the prepared baking sheets and bake for about 10-12 minutes, until light golden brown.
- Remove the cookies from the oven and let them cool completely.
- Spread jam on the cookies without the hole and place the cookies with the hole on top so that the jam is visible.
- Dust with powdered sugar and serve.
